I don't know about you but sometimes i get in a rut with what i make for dinner. I think that is why i enjoy eating out so much...it gives me some variety. I enjoy cooking, it is the clean-up i don't look forward to. There are those days that i just don't have the time to cook and need something that is fast, easy AND healthy. Awhile back i was looking threw my pantry trying to find something i could throw together. I had chicken breasts on hand and fresh spinach. I grabbed a few other things out and started putting it together. And this is what i came up with. Sundried tomato Chicken Spinach Bake....HA! That is what i call it anyway....the name basically has all the ingredients. Ladies this dish is simple, easy and for the most part pretty healthy. And pretty yummy i must say. This is one of the hubbies favorite dishes these days. Here is how i make it:
Ingredients:
4 frozen chicken breasts
Bag of fresh spinach
Jar of Sun dried tomato basil pesto (spaghetti isle by the plain basil pesto...usually top shelf in the sauce section)
2 jars of whole mushrooms
First lay the chicken breasts on the bottom of dish. Then the full bag of spinach (put it all on...it wilts down).
On top of that goes the sun dried tomato basil pesto then the mushrooms.
Cover with foil and bake on 400 for about 45 minutes. That is it. Simple! Easy! Yummy! :)

One of my favorites is polish stack. Ploish sausage, carrots, onions, potatoes, corn on the cob, and cabbage all steamed togethre in one pot. You can substitute any veggies you want, but it's really quick (20 prep &cook time) and very easy. And we all love it!
Next best is baked balsamic-glazed salmon with brown rice pilaf and steamed veggies. (Outr favorites are brocolli, carrots, &/or spinach). This one takes 2 pans, but is still really quick, easy, tasty and healthy!
And I definately need to try yours!
This looks incredibly yummy!!
I have found that when I'm having the hardest time coming up with something to cook that I usually become the most creative AND end up with a huge feast! Yesterday was a little different. I was struggling and so I pulled out the cookbook. Saw a recipe for stuffed bell peppers which I had never made before and threw it all together. Fairly easy and yummy. I steamed some vegies and viola!
